Do you do everything from take off to land? Or just once in the air take control?

I jumped off the train early and done a nervy shit and almost chickened out, done the take off myself well half they control rudder wasn't much different from doing it on a sim ,in air as much control as you like ,landing nah it fucked me over plane was bouncing a bitWhy is the one thing that caught my attention in all those shots, was the word FLAPS.

I figure (not that I know anything about it), but the landing is worse to fuck up than taking off?
As in taking off you might get death wobbles, but its all about amping up speed then lifting up.
Whereas landing, theres landing gears, speed, slowing up, lots more to stuff up possibly.
