Ok full just bought a full scotch fillet going low and slow indirect heat doin baked potato in duck fat and baked carrots
Any suggestions on the scotch fillet not a great deal of experience cooking whole ones
Take off the heat when around 130 degrees Fahrenheit and rest (I usually rest in an elevated baking dish and the juice dripping into the tray).
While resting, crank up the mofo heat to 700 degree Fahrenheit and after a minute, start searing. 45 seconds a side, pending on how much char you like.

Forgot pics ,turned out decent enough media rare pink ring smoke nice crust ect just not all that fazed with whole scotch fillets probably no need to do it again
Will order a suckling over the next few weeks those cunts are not cheap .

Forgot pics ,turned out decent enough media rare pink ring smoke nice crust ect just not all that fazed with whole scotch fillets probably no need to do it again

Yeah not really a fan of smoked steaks. More so Ribs and Brisket for smoking.
Steak just need a good reverse sear.

I done a Lamb at my mates earlier this year, what a cracker it was

Yeah in hindsight I would of been better off cutting 2inch steaks and doing a surf and turf .oh well you have to try these things and they all can't be winner's.

Had some snapper for lunch. Cooked fresh, was fairly tasty. Had some prawns and roast veggies with it too.
