Take off the heat when around 130 degrees Fahrenheit and rest (I usually rest in an elevated baking dish and the juice dripping into the tray).Ok full just bought a full scotch fillet going low and slow indirect heat doin baked potato in duck fat and baked carrots
Any suggestions on the scotch fillet not a great deal of experience cooking whole ones
While resting, crank up the mofo heat to 700 degree Fahrenheit and after a minute, start searing. 45 seconds a side, pending on how much char you like.
